Freshwater fish
Freshwater fish are important ingredients for various traditional dishes, which means they’re in high demand in the hospitality and food industries. Superfreeze
Delicate frozen fish keep their colour and quality when stored at -60 °C. Typical examples include tuna loins and escolar for grilling and frying. If your customers include specialised fish or sushi restaurants, KANZOW superfreeze products are the right choice, as our superfreeze process preserves both the typical look and the flavour. Saku tuna is a popular sushi ingredient, for example, because of its rich taste, its typical shape and perfect pink colour.
Thanks to its firm texture and mild flavour, which is influenced to a great extent by the manner of preparation, squid is considered a real delicacy in many countries.
